Duties of a dietary supervisor often include: dietary planning and preparation; operating the kitchen, discipline and direction of the dietary staff; training of dietary staff, development of new menus/dietary specifications/food services policy; providing leadership to ensure commitment to foodservice quality assurance standards; serving as a resource for nutrition information.
